COCOA AND BANANA FROZEN MOUSSE
This might just be my new favourite thing. I’m calling it a frozen mousse, but it tastes somewhere between a chocolate milkshake, a cold mousse and Angel Delight. DELICIOUS. With only TWO ingredients it would be tricky to find something simpler. The cocoa flavour is intense and scrumptiously chocolatey, while the frozen banana adds fluffiness and an ice-cream-like consistency. It also happens to be vegan, sugar free and gluten free. Ooh la LA.
I originally concocted it as a cold dessert on a hot day after these spicy miso soba noodles. It was ideal as a lil’ chilled something sweet to finish the meal. I’m now pretty much eating it any time of day, whenever I can.

Cocoa and banana frozen mousse
Serves 4, takes 5 minutes

A two ingredient genius dessert! Super refreshing and tasty, it feels much naughtier than it is. The top picture is what it looks like if you put it in the freezer, the picture above is how it comes out of the mixer. Try BOTH ways.
* Bananas - 2 large, ripe, semi-frozen*
* Cocoa powder - 2 heaped tbsp
Break the bananas into chunks and put in a mixer with the cocoa. Blend until smooth and airy, about five minutes. You’ll have to scrape down the sides a couple of times. Divide between four glasses.
Serve immediately, or store in the freezer. Remove from the freezer 15 minutes before serving.
* I put the bananas (peeled) in the freezer a few hours before making this, which is just about right for the consistency. I don’t have a super powerful blender so it would have struggled with fully frozen fruit. If you have a turbo blender you could probably use completely frozen bananas.
